Skordalia, for garlic lovers everywhere

1 large carrott, halved
1 small celery stalk
Few parsley stalks
Small onion
Few black peppercorns
500 g potatoes, peeled and cut into chunks
5 garlic cloves
185ml olive oil
Juice of 1 lemon

Put carrot, celery, parsley and onion in a fairly large saucepan of water, add some salt and the peppercorns and bring to the boil. Boil for around 15 mins, before adding the potatoes, and then boil for approx 25 mins or until potatoes are soft.
Meanwhile crush the garlic with a teaspoon of salt to make a puree and mix with a couple of tablespoons of olive oil in a small bowl.

Take out a third of the potatoes with a slotted spoon and mash, add the garlic mix and then add another third of the potatoes with more of the olive oil and a little of the lemon juice. Carry on until all the potato mix, lemon juice and olive oil is used up and is a smooth puree.
Lovely served up with, grilled/fried fish, meatballs, or just served up with fresh crusty bread. Serve at room temperature, and don't ask for any kisses for 24 hours xxxxxxxxxxxx

My greek neighbours cook Skorthalia, i love it, and now i will try it at home.

Maybe with a little less garlic though !
