I've made this cake for many years. It freezes well and is a great recipe when you have a glut of courgettes growing. I find it delicious, let me know what you think if you decide to make it.
225g/8oz castor sugar
175g/6oz soft brown sugar
350g/12oz plain flour
2tsp bicarb
1tsp baking pwder
1tbsp ground cinnamon
1tsp ground ginger
½ tsp ground cloves
1tsp salt
225ml/8fl oz sunflower oil
1tbsp vanilla essence
3 eggs
225g/8oz courgettes, grated
200g/70z raisins
100g/4oz chopped walnuts
1 tbsp grated orange rind
Seive the first nine ingredients into a large mixing bowl and mix well together.
Poor in the oil, add the vanilla essence and break in the eggs.
Pour mixture into a greased and lined 33X23cm (13X9inch) cake tin.
Bake for 45-50minsat Gas4/180C/350F.
Cool in the tin on a wire rack
