Baked Beetroot with Feta and Thyme

800 grams Beetroot
A splash or two of olive oil
1 Red Onion
2 cloves of Garlic
Leaves from 8 bushy sprigs of thyme, finely chopped
150g Feta
Salt & Freshly ground black pepper
200ml single cream


Cook the beetroot - unpeeled - in boiling water until soft to the core. (Or if you can buy fresh but already cooked like our local Veg Shop does that is okay) not bottled beetroot though. This will take 40 mins to 1.5 hours depending on size.

When they are done remove from the pan, leave to cool a little, then rub off any skin and cut into 2.5mm slices.

Meanwhile, heat the olive oil in a frying pan.  Add the onion and garlic and cook over a lowish heat for about 10 minutes, stirring occasionally, until soft and sweet.  Remove from the heat and stir in the thyme leaves.

Heat the oven to 200C/Gas Mark 6.  Lay half the beetroot slices in a gratin dish in a single layer, overlapping them slightly, then sprinkle with the onion mixture and half the feta.  Season well, then top with the remaining beetroot. Season again and pour the cream over the top.  Scatter with the remaining feta and the extra sprigs of thyme and bake for 40 minutes, or until the top is bubbling and browning round the edges.



Maybe good one for Vegetarians.

That sounds delicious Viv.

Our other daughter, not Ribena, is a veggie and loves beetroot. I'll have to make her this when she comes to visit. I'm sure she'll love it!

That sounds 'lish.
Not enough beetroot eaten so really must give this a try.

Another one to try, thanks Viv.

I am always on the lookout for beetroot recipes to try because it does really well in my garden but I don't like it pickled.
