beetroot soup

Beetroot recipe; Soften I roughly chopped onion and 2 garlic cloves in some olive oil (2 tbls) Add 2 tsps of ground cumin & 750g roughly chopped cooked beetroot (not pickled). Pour in 1.4 litres boiling water with veg stock cube & boil for 5 mins. I cook for about 8 mins. Remove from heat & add 6  -7 tbls still apple juice. Liquidise soup until very smooth. Taste & season with S&P and more cumin if it needs it. Stir in 2 tbls thickish cream or creme fraiche. Serve with a some cream dribbled artfully on the top & a scattering of toasted cumin seeds (optional).

This soup sounds lovely, I will try it as I have some beetroot still to dig up and was wondering what to make with it. Thanks Jan.

Hmm... Bit is not a problem in our country so we have a greatest opportunity for cooking beetroot soups. Actually I usually use anoter recipe http://happycookery.com/2012/01/31/beetroot-soup/
Very interesting. I definitely must cook this one  :)
