Courgette Cake
« on: March 30, 2012, 04:52:28 PM »
I've  made this cake for many years. It freezes well and is a great recipe when you have a glut of courgettes growing. I find it delicious, let me know what you think if you decide to make it.

225g/8oz castor sugar
175g/6oz soft brown sugar
350g/12oz plain flour
2tsp bicarb
1tsp baking pwder
1tbsp ground cinnamon
1tsp ground ginger
tsp ground cloves
1tsp salt
225ml/8fl oz sunflower oil
1tbsp vanilla essence
3 eggs
225g/8oz courgettes, grated
200g/70z raisins
100g/4oz chopped walnuts
1 tbsp grated orange rind

Seive the first nine ingredients into a large mixing bowl and mix well together.
Poor in the oil, add the vanilla essence and break in the eggs.
Pour mixture into a greased and lined 33X23cm (13X9inch) cake tin.
Bake for 45-50minsat Gas4/180C/350F.
Cool in the tin on a wire rack

I'm always wondering what to do with courgettes. I will have to remember this recipe!

I wonder if I could leave out the nuts. Perhaps it would affect the texture.
Think before you speak! If you can't say anything nice, don't say anything at all.

It would probably alter the texture slightly Trisa but I'd give it a try anyway.
