Mexican Seasoning Mix and Spicy Beef

This makes a batch of Mexican seasoning which has a shelf life of at least six months.

1/4 cup hot chilli powder
2 tablesp each of ground cumin, ground coriander,dried oregano and dried basil
1 tablesp each of dried thyme and garlic powder
3/4 teasp cayenne pepper

Stir everything together and keep in an airtight jar.

(You can heat this with beans - with or without meat - for a quick chilli, stir into tomato soup, scrambled eggs or rice pilaf, mix with oil and vinegar for a salad dressing on mixed leaves or pat onto beef steaks or burgers before grilling.)


Spicy beef with peppers

This takes about 10 -15 minutes to cook and makes a really speedy good sized supper for 2 depending on how large your appetite is. It's also very economical steak wise!

8oz flash fry or rump steak
1 to 1 1/2 teasp of Mexican Seasoning (or to taste)
10ml/2 teasp cornflour
1 Oxo cube
1 largish onion
1 red pepper
1 yellow pepper
4 spring onions for garnish (optional)
seasoning (optional)
45ml/3 tablesp oil

Cut the steak into thin strips and put in a dish.
Mix the Mexican seasoning with the cornflour and add to the beef and toss everything together.
Crumble the oxo cube into 1/4 pint/150ml of boiling water.

Peel and thinly slice the onion.
Remove core and seeds from the peppers and slice.
Trim the spring onions, if using, and slice.

Heat 1 tablesp oil in a large frying pan and add the onions and peppers and saute for 3-4 minutes over a high heat until the onions are golden. remove from pan and set aside.

Heat remaining oil, add the beef and cook over maximum heat until sizzling and browned.

Return the vegetables to the pan, pour in the stock and simmer for two minutes. Check seasoning.

Serve garnished with the chopped spring onion.

Serve with egg noodles which only need 2 minutes to cook!

(I have tweaked this recipe by adding another pepper or a chilli etc on occasion but this is the basic recipe.)
