Sausages with Lentils Herbs and Wine

2 tbsp Olive Oil
4 Sausages
1 Large Onion, thinly sliced
2 Garlic Cloves
200ml (7fl oz) Red Wine
100g (3.5 oz) Puy Lentils
200 ml (7fl oz) light beef stock
200 g (7 oz) chopped tomatoes or passata
Few Sprigs of fresh thyme
2 ready roasted peppers from a jar, drained and cut into chunks

Heat the oil in a pan and brown the sausages (or like I did I cooked the sausages in the oven) Remove to a plate.

Add onion to the pan and cook until golden. Add the garlic, cook for two minutes then add the wine, lentils, stock and tomatoes.  Part cover and simmer for 30 minutes then return the sausages to the pan with the thyme and Cook for another 10 minutes or until the sausages are cooked through and the sauce has thickened and reduced and the lentils are really soft.

Add a splash of water if the lentils need more cooking.  Stir through the peppers, cover and let sit for a few minutes and serve with crusty bread.

I actually also added a small chilli with the garlic as well.

I also cut the sausages up rather than leave them completely whole.

Very easy meal to prepare.

I'm gonna have a go at that one x viv, any particular type of sausage??? And would (cheats) tinned puy lentils be ok , x Karen

I bet that would be lovely with some hot, crusty bread!  (We definitely need a lip-smacking smiley!!)  :)

Any type of sausages you want.  I also added some Choritzo as well as other sausages.  I would imagine the lovely Greek Sausages would go down a treat as well.


Yes tinned puy lentils fine.  I used a packet one that I bought in Co-Op.
