the green tops of beetroot

delicious boiled (slightly al dente so have some crunch) but if not all eaten I mix thick yoghurt with mayonnaise, curry powder and a little seasoning, mix this mixture with  the green beetroot- or indeed any 'horta' (greens) and it makes a lovely salad
