This book shows the local knowledge of the author being based in the village for 5 years. The recipes are authentic and achievable by any novice.This is not the sanitised cooking of Greek food by professional chefs.This is the regional, village cooking of everyday life in Corfu.
The recipes are scattered among the personalities of village people, who willingly show the authors the ingredients and methods used to produce food for the gods.It was essential that the authors were shown the methods because the measures used are idiosyncratic to say the least.A spoonful, a cupful or handful need to be physically observed and then translated for us all to understand.
The villages mentioned in the book exist and the people are still there cooking in the same way as their forebearers.The art of cooking in Corfu can be seen in this book as a celebration of the land.
The story of the authors' love affair with the island is alsoapparent in this book as they travel around gathering recipes from village folk.
So much more than a cookery book it is also a history book and an insight into the life of a village in Corfu.

I have this book too. Good reading as well as excellent recipes.
it's only the hairs on a gooseberry that stop it being a grape!

We have this book! In fact we have two copies! One is a first edition and one is my kitchen copy which is well read and splattered!

Philip, who helped James Chatto with the book, owns our local kafenion and is a good friend!

I love this book and it is nearly always open in my kitchen.

As Trisa says, we have two copies. Thereby hangs a tale! The copy that we have that does not sit in the kitchen, is pristine with the dust jacket and is signed by the author. I found this copy on the Canadian Amazon site. Imagine the look on Philipos' face when he invited us to get our copy signed when James was over and I smuggly pointed out that ours already was. Trisa's kitchen copy is a little food splattered as all good cookery books should be!

The book has been out of print for a long while. If anyone hasn't got a copy and likes the sound of it, I would urge you to get one from Amazon whilst there are a few secondhand copies going at a fiver, they are great value.
